Spaghetti con Broccoli Rabe

Many people love broccoli rabe but don’t always have any ideas of how to make it- aside from sauteing and serving it in a sub with grilled sausage (yum!).  This is a quick go to dish for me when I have broccoli rabe because it turns a side into an entree.  I simply trim the stalks and remove any yellow or wilted leaves from the broccoli.  Bring a large pot of water to a boil and add the broccoli.  Let cook for about 10 minutes or until stalks are tender.  Meanwhile in a large pan saute olive oil with some red pepper flakes and thinly sliced garlic.  Drain the broccoli, let cool slightly and then roughly chop into two inch long pieces.  Add the broccoli to the pan and salt.  Let the broccoli cook for as long as it takes you to boil some spaghetti or linguine.  Add the spaghetti right to the pan of broccoli, adding some cooking water to the pan.  Toss well and enjoy!
